• Go to the chef’s kitchen studio in downtown Mexico City
• First, you will shop for ingredients at Mercado San Juan
• Take a tour of Mercado San Juan
• Market tasting (fruits, spices, mezcal, and exotic ingredients)
• Walk to the studio from the market and start cooking class
• Learn to prepare dishes like tinga, tamales, and chilaquiles
• Professional knife-handling session
• Food waste handling lessons
• Nutrition and gut health lessons
